Ingredients

4 medium zucchinis, sliced

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

3 large eggs

1 sweet onion, finely chopped

1 cup seasoned breadcrumbs

2 tbsp olive oil

Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  2. In a skillet over medium heat, heat olive oil and sauté the chopped onion until translucent (about 5 minutes).

  3. Add sliced zucchini and garlic powder; sauté until slightly softened (3-4 minutes).

  5. Combine sautéed vegetables with cheeses and egg mixture in a large bowl; mix gently.

  6. Pour the mixture into the prepared baking dish, top with breadcrumbs, and bake for 30-35 minutes or until golden brown.
