Ingredients
White Chocolate Cookie Crust
- 1 ½ cups white chocolate cookies, crushed
 - 6 tbsp unsalted butter, melted
 
Pumpkin Cheesecake
- 3 packages cream cheese (8oz/250g packages), softened
 - 1 cup brown sugar
 - 3 large eggs
 - 2 cups pumpkin puree
 - ¼ cup sour cream
 - 1 ½ tsp pumpkin spice
 - 1 tsp vanilla extract
 - pinch of salt
 
White Chocolate Glaze
- 1 cup heavy cream
 - 1 ½ cups white chocolate, finely chopped
 - 1 tbsp unsalted butter
 
Instructions
- White Chocolate Cookie Crust – Preheat oven to 350°F. Mix cookie crumbs and melted butter, then press into a 9-inch springform pan. Bake for 7 minutes and cool.
 - Pumpkin Cheesecake – Preheat oven to 375°F. Beat cream cheese, add brown sugar, eggs, pumpkin puree, sour cream, pumpkin spice, vanilla, and salt. Pour into crust, bake, cool, and refrigerate.
 - White Chocolate Glaze – Heat cream, add white chocolate and butter. Let sit, stir until melted. Cool, thicken in fridge, then pour over cheesecake.
