Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 pound boneless, skinless chicken breasts, diced

2 cans (15 oz each) white beans, drained and rinsed

1 can (4 oz) diced green chilies

4 cups low-sodium chicken broth

1 teaspoon ground cumin

1 teaspoon dried oregano

½ teaspoon chili powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup sour cream

½ cup shredded Monterey Jack cheese

Fresh cilantro, chopped (for garnish)


Instructions

  1. Sauté the Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
