Ingredients

For the Chili:

  • 2 cups chopped rotisserie chicken
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 2 apples, peeled and roughly chopped
  • 1 white onion, peeled and roughly diced
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 15 oz cans cannellini beans, drained
  • 2 cups shredded Mexican blend cheese
  • Salt and pepper to taste

Instructions

  1. Sauté Apples and Onions: In a dutch oven, heat olive oil over medium heat. Add apples, onion, chili powder, and cumin. Cook until soft, about 6-8 minutes. Set aside.
  2. Make Roux: Reduce heat to medium-low. Melt butter, whisk in flour, and cook for 60 seconds.
  3. Add Broth and Milk: Gradually whisk in broth, then milk. Simmer until thickened, about 3-5 minutes.
  4. Combine Ingredients: Stir in chicken, beans, and apple/onion mixture.
  5. Thicken and Serve: If needed, thin with broth. Stir in cheese until melted. Serve with toppings.

Notes

  • This chili is mild, add jalapeno for more heat.
  • If too thick, add more broth cautiously.
