Ingredients
For the Chili:
- 2 cups chopped rotisserie chicken
- 2 tbsp olive oil
- 2 tbsp chili powder
- 2 tsp ground cumin
- 2 apples, peeled and roughly chopped
- 1 white onion, peeled and roughly diced
- 4 tbsp butter
- 1/4 cup flour
- 2 1/2 cups chicken broth
- 3/4 cup half & half
- 2 15 oz cans cannellini beans, drained
- 2 cups shredded Mexican blend cheese
- Salt and pepper to taste
Instructions
- Sauté Apples and Onions: In a dutch oven, heat olive oil over medium heat. Add apples, onion, chili powder, and cumin. Cook until soft, about 6-8 minutes. Set aside.
- Make Roux: Reduce heat to medium-low. Melt butter, whisk in flour, and cook for 60 seconds.
- Add Broth and Milk: Gradually whisk in broth, then milk. Simmer until thickened, about 3-5 minutes.
- Combine Ingredients: Stir in chicken, beans, and apple/onion mixture.
- Thicken and Serve: If needed, thin with broth. Stir in cheese until melted. Serve with toppings.
Notes
- This chili is mild, add jalapeno for more heat.
- If too thick, add more broth cautiously.
- Use full-fat dairy for proper thickening.
