  • 2¼ teaspoons ground turmeric

  • ¼ cup brown sugar, light or dark, packed
  • 2 teaspoons lemon zest (optional)
  • 1 large egg, room temperature
  • 1 egg yolk
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare Dry Ingredients: In a medium bowl, combine flour, baking soda, baking powder, cornstarch, and salt. Set aside.
  2. Melt Butter with Turmeric: Melt butter in a saucepan over medium heat until it begins to bubble. Remove from heat, stir in turmeric, and let stand.
  3. Mix Wet Ingredients: In a large mixing bowl, combine turmeric butter, sugars, and lemon zest. Mix well.
  4. Add Eggs and Vanilla: Mix in the egg, egg yolk, and vanilla extract until combined.
  5. Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Chill Dough: Scoop dough into balls, coat in sugar, and refrigerate for 2 hours.
