Ingredients
For the Tropical Smoothie:
- 1/2 cup sweetened coconut
 - 1 cup frozen pineapple
 - 1 cup frozen mango
 - 1/3 cup low fat coconut Greek yogurt
 - 1/2-1 tbsp light brown sugar
 - 1/2 cup coconut milk (or more as needed)
 
For Garnish:
- 4 shortbread cookies, crushed
 
Instructions
- Prepare the Garnish: Toast the coconut on a baking sheet in a preheated oven at 325 degrees for 3-5 minutes until golden brown. Set aside.
 - Blend the Smoothie: In a blender, combine frozen pineapple, mango, coconut Greek yogurt, brown sugar, and coconut milk. Blend until smooth, adjusting consistency with more coconut milk if needed.
 - Serve: Pour the smoothie into chilled cups. Top with toasted coconut and crushed shortbread cookies.

- For a creamier texture, use full-fat coconut milk.
