Ingredients
For the Berry Mixture:
4 cups assorted frozen berries (blueberries, raspberries, blackberries, and strawberries work great)
1 teaspoon lemon juice
1 tablespoon granulated sugar (or alternative sweetener)
1 tablespoon cornstarch
For the Oatmeal Crumb Topping:
1 cup old-fashioned whole rolled oats
⅓ cup white whole wheat flour (or all-purpose flour)
⅓ cup brown sugar (loosely packed)
½ cup butter (or plant-based butter)
Instructions
- Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). - Step 2: Prepare the Berry Mixture
In a large bowl, combine the frozen berries with lemon juice, granulated sugar, and cornstarch. Set aside. Tip: Do not defrost the frozen berries, as they will release their juices when baking, making the filling even more flavorful. - Step 3: Make the Oatmeal Crumb Topping
In a medium-sized bowl, mix the flour, brown sugar, and oats. Melt the butter in the microwave, then drizzle it over the dry ingredients. Stir with a fork until the mixture becomes crumbly. - Step 4: Assemble the Crisp
Divide the berry mixture between six ramekins or layer it in the bottom of an 8×11-inch baking pan. Evenly sprinkle the oatmeal crumb topping over the berries. - Step 5: Bake the Crisp
Place the dish in the oven and bake for about 40 minutes, or until the topping is golden brown and the berries are tender and starting to bubble. - Step 6: Serve
Let the berry crisp cool slightly before serving. Enjoy warm or at room temperature with a scoop of vanilla ice cream or whipped cream for the perfect finish.
Notes
- Freezing: To freeze, ensure the crisp is fully cooled and tightly covered with plastic wrap or aluminum foil. Store in an airtight container for up to 2–3 months.
- Reheating: Preheat the oven to 350°F and bake for about 15–20 minutes or until heated through and the topping is crispy. If reheating from frozen, allow the crisp to thaw in the refrigerator overnight before reheating.
