Description

Ingredients

6 large eggs

1 cup cherry tomatoes, halved

1/2 cup fresh basil leaves, chopped

1 small yellow onion, diced

2 tablespoons extra virgin olive oil

Salt and pepper, to taste


Instructions

  1. Preheat oven to 350°F (175°C).

  2. In an oven-safe skillet, heat olive oil over medium heat. Sauté onion until soft and translucent, about 5 minutes.

  3. Add halved cherry tomatoes and cook until slightly softened.

  4. In a bowl, whisk eggs with salt and pepper.

  5. Pour eggs over sautéed vegetables. Sprinkle chopped basil on top.

  6. Transfer skillet to oven and bake for 20–25 minutes, until eggs are set and lightly golden at the edges.

  7. Let cool slightly, slice into wedges, and serve warm or at room temperature.
