Description
This French Onion Pasta is a comforting fusion dish combining the rich, caramelized flavors of classic French onion soup with hearty pasta. Slow-cooked onions create a deep, sweet base, complemented by garlic, fresh thyme, white wine, and Dijon mustard. The pasta simmers in a savory beef broth until perfectly al dente, then is enriched with creamy smoked gouda and parmesan for a luscious, cheesy finish. Garnished with fresh thyme, this dish is an indulgent and flavorful main course perfect for a cozy meal.
Ingredients
Base
- 3 tbsp olive oil
- 3 yellow onions, thinly sliced
- 3 garlic cloves, minced
- 1 tbsp fresh thyme, plus more for garnish
- 1 tsp sea salt
- 1/2 tsp ground black pepper
Liquids and Flavorings
- 1/2 cup dry white wine
- 1 tbsp Dijon mustard
- 4 cups beef broth
- 1/2 cup heavy cream or full-fat coconut milk
Pasta and Cheese
- 12 oz short pasta (gluten-free malfada recommended)
- 1/2 cup shredded smoked gouda
- 1/2 cup shredded parmesan, plus extra for garnish
Instructions
- Caramelize Onions: Heat olive oil in a large skillet over medium heat. Add thinly sliced onions and cook, stirring frequently, until deeply browned and caramelized, about 30 to 40 minutes, developing rich sweetness without burning.
- Add Aromatics and Deglaze: Stir in minced garlic, fresh thyme, sea salt, and black pepper, cooking for 2 minutes until fragrant. Pour in white wine and Dijon mustard, scraping the pan bottom with a wooden spoon to deglaze and lift all browned bits for about 2 minutes.
- Simmer Pasta in Broth: Add the short pasta and beef broth to the pan. Increase heat to medium-high and simmer uncovered, stirring occasionally to prevent sticking, until most broth is absorbed and pasta is al dente, about 10-15 minutes. Add a splash of water if liquid evaporates too quickly.
- Melt Cheeses and Finish: Stir in heavy cream, smoked gouda, and parmesan cheese. Continue to simmer and stir for 1-2 minutes until cheeses are fully melted and integrated into a creamy sauce.
- Adjust Seasoning and Serve: Taste the pasta and adjust seasoning if needed. Serve warm, garnished with additional fresh thyme and a sprinkle of parmesan cheese for extra flavor and presentation.
Notes
- Caramelizing onions properly is key; don’t rush as it takes 30-40 minutes to develop deep flavor without bitterness.
- If onions or pasta start sticking, deglaze the pan with a splash of water, wine, or broth to loosen the fond.
- Use a wide skillet or cast-iron pan to allow even cooking and efficient steam release during caramelization.
