Ingredients

For the Turkey Roll:

3 lb boneless turkey breast, skin on

For the Filling:

4 oz cream cheese, at room temperature

½ cup spinach, chopped

⅓ cup kalamata olives, sliced

1 teaspoon minced garlic

1 teaspoon dried rosemary

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon ground black pepper

For the Outer Seasoning:

2 tablespoons butter, melted

½ teaspoon paprika

½ teaspoon onion powder

½ teaspoon garlic powder

½ teaspoon salt

½ teaspoon ground black pepper


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper and set aside.
  2. Prepare the Turkey Breast: Pat the turkey breast dry with paper towels. Slice it horizontally to butterfly it open, then pound it to an even thickness using a meat mallet.
  3. Make the Filling: In a bowl, combine the cream cheese, chopped spinach, sliced kalamata olives, minced garlic, dried rosemary, dried thyme, salt, and pepper. Mix until well combined.
  4. Assemble the Roll: Spread the filling evenly over the prepared turkey breast. Starting from one end, roll the turkey tightly to enclose the filling.
  5. Season the Outside: Brush the outside of the turkey roll with melted butter. In a small bowl, mix together the paprika, onion powder, garlic powder, salt, and black pepper. Sprinkle this seasoning mixture evenly over the turkey roll.
  6. Tie and Roast: Secure the roll with kitchen twine and place it on the prepared baking tray. Roast in the preheated oven for 30–35 minutes, or until the internal temperature reaches 160°F (71°C). For a golden finish, broil for the last 2–3 minutes.
  7. Rest and Serve: Remove the turkey roll from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute, ensuring a moist and flavorful dish.
