Ingredients

1 pound large shrimp, peeled and deveined (tails on)

1 cup breadcrumbs (regular or panko)

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 tablespoon garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon lemon juice

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Olive oil, for drizzling

Lemon wedges, for serving


Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare the shrimp: Peel and devein the shrimp, leaving the tails on for presentation. Butterfly each shrimp by slicing along the back and gently opening them.
  3. Make the stuffing: In a bowl, combine the breadcrumbs, mozzarella, Parmesan, garlic, parsley, lemon juice, paprika, salt, and pepper. Mix thoroughly.
  4. Stuff the shrimp: Open each butterflied shrimp and press a spoonful of stuffing into the opening. Lightly press to secure the filling.
  5. Arrange in dish: Place the stuffed shrimp in a single layer in the prepared baking dish.
  6. Drizzle with oil: Lightly drizzle olive oil over the stuffed shrimp to keep them moist during baking.
  7. Bake: Bake in the preheated oven for 15–20 minutes, or until the shrimp are opaque and the stuffing is golden.
  8. Serve: Garnish with extra parsley and serve hot with lemon wedges on the side.
