Large shrimp are butterflied and filled with a flavorful stuffing made from breadcrumbs, cheese, herbs, and spices, then baked until golden and juicy. Ingredients
1 pound large shrimp, peeled and deveined (tails on)
1 cup breadcrumbs (regular or panko)
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 tablespoon garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
1 teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
Olive oil, for drizzling
Lemon wedges, for serving
Instructions
- Preheat the oven: Set your oven to 375°F (190°C). Lightly grease a baking dish.
 - Prepare the shrimp: Peel and devein the shrimp, leaving the tails on for presentation. Butterfly each shrimp by slicing along the back and gently opening them.
 - Make the stuffing: In a bowl, combine the breadcrumbs, mozzarella, Parmesan, garlic, parsley, lemon juice, paprika, salt, and pepper. Mix thoroughly.
 - Stuff the shrimp: Open each butterflied shrimp and press a spoonful of stuffing into the opening. Lightly press to secure the filling.
 - Arrange in dish: Place the stuffed shrimp in a single layer in the prepared baking dish.
 - Drizzle with oil: Lightly drizzle olive oil over the stuffed shrimp to keep them moist during baking.
 - Bake: Bake in the preheated oven for 15–20 minutes, or until the shrimp are opaque and the stuffing is golden.
 - Serve: Garnish with extra parsley and serve hot with lemon wedges on the side.

- For extra flavor, substitute mozzarella with cheddar or pepper jack.
 - Add cayenne or chili flakes for a spicy version.
 - Mix in finely chopped spinach, scallions, or red bell peppers for more color and nutrients.
