Ingredients
Chicken
- 1 lb boneless skinless chicken breast, thinly sliced into 1/4 inch thick bite sized pieces
- 1 tablespoon light soy sauce
- 1 tablespoon Shaoxing wine
- 2 teaspoons cornstarch
- 1 tablespoon water
- 2 teaspoons vegetable oil
Stir Fry Sauce
- ¾ cup low sodium chicken broth
- 1 ½ tablespoon light soy sauce
- 1 tablespoon oyster sauce
- ½ tablespoon dark soy sauce
- 1 tablespoon granulated sugar
- 2 teaspoons cornstarch
- 1 teaspoon sesame oil
Stir Fry
- ½ medium yellow onion, diced into 1-inch pieces
- 5 cloves garlic, minced
- 1 lb string beans (green beans), ends trimmed, chopped into 2-inch pieces
Instructions
- Marinate the chicken: In a medium mixing bowl, combine the sliced chicken breast, light soy sauce, Shaoxing wine, cornstarch, water, and vegetable oil. Mix thoroughly and let it marinate for at least 15 minutes to absorb the flavors.
- Prepare the stir-fry sauce: In a small bowl, whisk together chicken broth, light soy sauce, oyster sauce, dark soy sauce, sugar, and cornstarch until the sugar dissolves and the sauce is smooth. Set aside.
- Cook the chicken: Heat 1 tablespoon of oil in a wok or large pan over medium-high heat until hot. Add chicken in a single layer, searing for 1-2 minutes until golden brown, then flip and cook for an additional 1-2 minutes until cooked through. Remove chicken from the pan and set aside.
- Cook the green beans: In the same wok or pan, heat another tablespoon of oil over medium heat. Add the string beans and stir occasionally, cooking for about 6 minutes until tender but still crisp.
- Combine ingredients and finish the stir-fry: Push green beans to one side of the wok, add 1 tablespoon oil to the emptied space, sauté diced onions and minced garlic for about 1 minute until fragrant and soft. Pour in the prepared sauce and simmer for 1 minute until thickened. Return the cooked chicken to the pan along with the sesame oil, tossing everything together for 30 seconds to coat evenly.
