Ingredients
1 pre-made pie crust
4 cups fresh strawberries, hulled and halved
1 cup granulated sugar
1/4 cup cornstarch
1/4 cup water
1 tablespoon lemon juice
1/4 teaspoon salt
Whipped cream, for serving
Instructions
-
Preheat oven to 425°F (220°C). Place pie crust into a 9-inch pie dish.
-
In a saucepan, whisk together sugar, cornstarch, salt, and water. Cook over medium heat, stirring constantly, until thickened. Stir in lemon juice and let cool slightly.
-
In a large bowl, mix strawberries with cooled glaze until coated.
-
Pour filling into prepared crust.
-
Bake for 30 minutes, or until crust is golden and filling is set.
-
Cool completely before slicing. Serve with whipped cream.
Notes
- Blind-bake the crust for crispier results.
- Use fresh strawberries for best texture, but thawed frozen ones can work if drained well.
- Add gelatin for a firmer filling.
- Spread sweetened cream cheese on crust before filling for a creamy twist.
- Best served chilled or at room temperature.
