Ingredients
For the Pasta and Steak:
2 boneless ribeye or sirloin steaks (6 oz each)
12 oz pasta (spaghetti, fettuccine, or penne)
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
For the Garlic Parmesan Sauce:
4 cloves garlic, minced
½ cup heavy cream
½ cup grated Parmesan cheese
Fresh basil or parsley, for garnish
Instructions
-
Cook the pasta:
Boil the pasta in salted water according to package directions until al dente (8-10 minutes). Drain the pasta, reserving ½ cup of pasta water for later use. -
Cook the steak:
While the pasta is cooking, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the steaks with salt and pepper, then sear for 4-5 minutes on each side, or until the desired doneness is reached.
Remove the steaks from the skillet and let them rest for a few minutes before slicing them into thin strips. -
Make the garlic Parmesan sauce:
In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for about 1 minute until fragrant.
Add the heavy cream and bring it to a simmer. Once simmering, whisk in the Parmesan cheese and cook for another 2-3 minutes until the sauce thickens.
If the sauce becomes too thick, use the reserved pasta water to adjust the consistency. -
Combine and serve:
Toss the cooked pasta into the creamy garlic-Parmesan sauce, ensuring the pasta is well coated. Stir in the sliced steak just before serving. -
Garnish and enjoy:
Garnish with fresh basil or parsley and serve immediately.
Notes
- Vegetable Add-ins: Add vegetables like spinach, mushrooms, or sun-dried tomatoes to the sauce for added flavor and texture.
- Customize the Pasta: You can use other pasta shapes such as rigatoni or farfalle for variety.
- Spice it up: Add red pepper flakes to the garlic sauce if you want a little heat in the dish.
- Alternate Proteins: Use chicken or pork instead of steak for a different protein option.
