Ingredients

For the Egg Bites:

  • 1 cup water
  • 1/2 lb Italian sausage
  • 6 large eggs
  • 1/2 cup monterey jack cheese, grated
  • 1/4 cup cottage cheese
  • 2 tbsp sun-dried tomato pesto
  • 1 tsp hot sauce
  • 1 tsp basil
  • 1/4 tsp coarse Kosher salt
  • 1/4 tsp pepper
  • Non-stick spray


Instructions

  1. Preheat Oven: Preheat the oven to 300°F and place a baking dish filled with water on the bottom rack to create a humid environment.
  2. Cook Sausage: Cook Italian sausage in a skillet over medium-high heat until barely done. Drain on paper towels.
