Ingredients
For the Egg Bites:
- 1 cup water
 - 1/2 lb Italian sausage
 - 6 large eggs
 - 1/2 cup monterey jack cheese, grated
 - 1/4 cup cottage cheese
 - 2 tbsp sun-dried tomato pesto
 - 1 tsp hot sauce
 - 1 tsp basil
 - 1/4 tsp coarse Kosher salt
 - 1/4 tsp pepper
 - Non-stick spray
 
Instructions
- Preheat Oven: Preheat the oven to 300°F and place a baking dish filled with water on the bottom rack to create a humid environment.
 - Cook Sausage: Cook Italian sausage in a skillet over medium-high heat until barely done. Drain on paper towels.
 - Prepare Egg Mixture: In a blender, combine eggs, pesto, basil, half of the jack cheese, cottage cheese, hot sauce, salt, and pepper. Blend until frothy. Add sausage if desired.
 - Fill Muffin Tin: Spray a muffin tin with non-stick spray. Add sausage and cheese to each cup, then pour in the egg mixture until half full.
 - Bake: Bake for 28-30 minutes until set. Allow to cool before removing from the tin.
 - Serve: Enjoy the egg bites warm, or store in the refrigerator for up to 5 days.
