Ingredients

For the Dough:

2 cups all-purpose flour (plus extra for dusting)

1 packet (2¼ tsp) active dry yeast (ensure it’s fresh)

½ cup warm water (about 110°F – should feel like a comfortable bath)

2 tbsp extra virgin olive oil

1 tsp salt

½ cup spring onions, finely chopped (both white and green parts)

2 tbsp mixed fresh herbs, chopped (parsley, dill, and chives work wonderfully)

For Finishing:

Extra olive oil for brushing (optional)


Instructions

  1. Activate the Yeast:
  2. In a small bowl, dissolve the yeast in warm water. Let it sit for 5-10 minutes until it becomes foamy. If it doesn’t foam, your yeast might be inactive—try again with fresh yeast.
  3. Make the Dough:
  4. In a large mixing bowl, combine the foamy yeast mixture with olive oil and salt. Gradually add the flour, mixing until a soft dough forms.
  5. Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. The dough should spring back when gently poked.
  6. First Rise:
  7. Place the dough in a lightly oiled bowl, cover it with a damp towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  8. Add the Onions and Herbs:
  9. Once the dough has risen, punch it down gently and knead in the chopped spring onions and herbs until evenly distributed. Don’t overwork the dough.
  10. Shape the Rolls:
  11. Divide the dough into 8-10 equal pieces and shape them into smooth balls. Place them on a parchment-lined baking sheet, leaving some space between each roll.
  12. Cover the rolls with a damp towel and let them rise for another 30 minutes, until they puff up.
