Tender chicken thighs are marinated in a spicy blend of seasonings, paired with sweet potatoes and onions, then grilled to perfection and finished with a sweet honey glaze. Ingredients

Sweet Potato Kebabs:

  • 12 large sweet potatoes, peeled and cut into 1-inch cubes

Chicken Kebabs:

  • 1 1/2 lbs. boneless, skinless chicken thighs, cut into 2-inch pieces
  • 1 large sweet onion, cut into 1 1/2-inch chunks and layers separated
  • 7 (12-inch) bamboo skewers*

Spice Mix + Glaze:

  • 3 Tbsp. olive oil
  • 2 tsp. garlic powder
  • 2 tsp. chili powder
  • 1 tsp. kosher salt
  • 1 tsp. black pepper
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1/4 tsp. crushed red pepper
  • 6 Tbsp. honey
  • 2 tsp. apple cider vinegar

Instructions

  1. Cook Sweet Potatoes: Boil sweet potato cubes until nearly cooked but still firm. Drain and cool.
  2. Prepare Spice Mix + Glaze: Combine olive oil, garlic powder, chili powder, salt, pepper, cumin, paprika, and crushed red pepper. In a separate bowl, mix honey and vinegar.
  3. Marinate Ingredients: Toss chicken with half of spice mix. Toss remaining spice mix with potatoes and onions.
  4. Skewer and Grill: Thread chicken, sweet potatoes, and onions onto skewers. Brush with half of honey glaze. Grill until chicken is cooked through.
  5. Glaze and Serve: Brush skewers with remaining honey glaze. Optionally, garnish with basil before serving.

Notes

  • Soak bamboo skewers in water for 30 minutes before using to prevent burning.
  • You can substitute chicken thighs with chicken breast, adjusting cooking time as needed.
