Ingredients
Red Potatoes:
- 2 ½ pounds red potatoes, rinsed and scrubbed

- 1 ½ teaspoons fresh thyme, finely chopped
- 1 ½ teaspoons salt

Instructions
- Preheat oven to 400 degrees. Boil the red potatoes until fork-tender. Dry them thoroughly.
- Smash the Potatoes: Place the potatoes on a baking sheet and smash each potato twice in a criss-cross pattern.
- Prepare the Garlic Herb Sauce: Whisk together the melted butter, garlic, herbs, salt, and pepper. Drizzle the sauce over the potatoes.
- Bake: Bake the smashed potatoes in the oven until crispy around the edges, about 20-25 minutes. Top with fresh parsley before serving.
