Ingredients

4 boneless, skinless chicken breasts

1 cup chicken broth

1 can (10.5 oz) cream of chicken soup

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Instructions

  1. Prepare the Chicken:
    Rinse the chicken breasts under cold water and pat them dry. Season with salt, pepper, garlic powder, onion powder, and thyme.
  2. Sear the Chicken:
    Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes per side until golden brown. Remove and set aside.
  3. Prepare the Stuffing Mixture:
    In a large bowl, combine the stuffing mix with chicken broth. Stir until the stuffing is evenly moistened. Add the cream of chicken soup and frozen mixed vegetables, and mix well.
  4. Assemble in the Slow Cooker:
    Place the seared chicken breasts at the bottom of the slow cooker. Pour the stuffing mixture over the chicken, spreading it evenly.
  5. Cook:
    Cover and cook on low for 4-6 hours, or on high for 2-3 hours. If the stuffing looks dry, add a splash of chicken broth during cooking.
  6. Check the Chicken:
    Ensure the chicken reaches an internal temperature of 165°F (75°C) before serving.
  7. Serve:
    Fluff the stuffing with a fork and serve each chicken breast with a generous portion of stuffing. Garnish with fresh parsley, if desired.
