Instructions
- Sauté the Onions and Garlic: Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic. Sauté until the onions turn golden brown, about 5 minutes.
- Add the Carrots (Optional): Stir in the diced carrots (if using) and sauté for an additional 3 minutes.
- Toast the Rice: Add the long-grain rice to the pot and stir it well to combine. Toast the rice for about 2 minutes to enhance the flavor.
- Add the Broth: Pour in the vegetable broth, bringing the mixture to a gentle boil while scraping up any browned bits from the bottom of the pot.
- Simmer the Rice: Reduce the heat to low, cover, and let the rice simmer for about 20 minutes, or until the liquid is absorbed and the rice is tender.
- Add the Spinach (Optional): Remove the pot from the heat, add fresh spinach (if using), and let it wilt for about 2 minutes. Fluff the rice with a fork to combine everything.
