Description

These Salisbury Steak Meatballs with Mushroom Gravy are a hearty and comforting twist on the classic Salisbury steak. Juicy beef meatballs are baked to perfection and smothered in a rich, savory mushroom gravy, creating a meal that pairs beautifully with mashed potatoes, egg noodles, rice, or crusty bread. Perfect for weeknight dinners, family gatherings, or meal prep, this recipe is simple, flavorful, and always satisfying.

Ingredients

For the Meatballs:

1 lb ground beef (80/20 or 85/15 for juiciness)

1/4 cup breadcrumbs

1/4 cup milk

1 egg

1/2 onion, finely chopped

2 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

For the Mushroom Gravy:

2 cups sliced mushrooms (button or cremini)

2 tbsp olive oil

2 cups beef broth (low-sodium recommended)

1 tbsp Worcestershire sauce

1 tbsp soy sauce

1/4 cup heavy cream (optional for extra richness)

Salt and pepper, to taste

Instructions

  1. Step 1: Prepare the Meatballs
  2. Preheat the oven to 400°F (200°C).
  3. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, and black pepper. Mix gently until just combined.
  4. Shape the mixture into 1–1.5 inch meatballs and place them on a parchment-lined or lightly greased baking sheet.
  5. Bake for 20 minutes, until cooked through and golden brown.
  6. Step 2: Make the Mushroom Gravy
  7. Heat olive oil in a large skillet over medium heat. Add mushrooms and sauté 5–7 minutes until tender and browned.
  8. Stir in beef broth, Worcestershire sauce, and soy sauce. Simmer for 10 minutes to meld flavors and slightly thicken.
  9. Optional: Stir in heavy cream for a richer gravy and cook 2–3 more minutes. Season with salt and pepper to taste.
  10. Step 3: Combine and Serve
  11. Gently add baked meatballs to the skillet with gravy and simmer 5 minutes to coat meatballs in flavor.
  12. Serve over mashed potatoes, egg noodles, rice, or crusty bread, spooning extra gravy on top.

Notes

  • Protein Substitutions: Ground turkey or chicken can replace beef; add extra milk or olive oil to keep meatballs moist.
  • Thicker Gravy: Reduce longer or use a cornstarch slurry (1 tbsp cornstarch + 2 tbsp cold water).
  • Herbs & Spices: Fresh parsley, thyme, or paprika can enhance flavor.
  • Make Ahead: Meatballs and gravy can be prepared and stored in the fridge for up to 3 days.
  • Freezer-Friendly: Freeze cooked meatballs with gravy for up to 3 months; reheat gently.
