Ingredients

For the Sautéed Spinach and Mushrooms:

8 ounces cremini mushrooms, sliced thinly

2 cloves garlic, minced

8 cups fresh spinach (will wilt down significantly)

Kosher salt, to taste

Freshly ground black pepper, to taste

½ medium lemon, juiced (freshly squeezed)

Parmesan cheese (optional, for serving)

Instructions

  1. Prepare the Mushrooms:
  2. Clean the cremini mushrooms by wiping them with a damp cloth, then slice them thinly. Set aside.
  3. Sauté the Mushrooms:
  4. In a large sauté pan, heat the olive oil over medium-high heat until shimmering.
  5. Add the sliced mushrooms to the pan and sauté for about 4 minutes, or until golden brown and tender.
  6. Season with kosher salt and freshly ground black pepper, and continue cooking for an additional 2 minutes.
  7. Add Garlic and Spinach:
  8. Stir in the minced garlic and cook for another minute until fragrant.
  9. Add the fresh spinach to the pan, stirring occasionally, and sauté for about 2 minutes until the spinach is wilted.
  10. Finish the Dish:
  11. Remove from heat and add freshly squeezed lemon juice, stirring to combine.
  12. Optionally, sprinkle with Parmesan cheese before serving for added richness.
  13. Serve:
  14. Serve warm as a side dish or add it to your favorite meals for extra flavor and nutrition.
