Description

This Roasted Mediterranean Chicken Thighs & Baby Potatoes is a simple, one-pan meal that’s packed with vibrant Mediterranean flavors. Juicy chicken thighs are marinated in a rich blend of spices, while baby potatoes roast perfectly in the same pan for a satisfying dinner.


Ingredients

Chicken Thighs

6 bone-in chicken thighs

Marinade

2 tbsp olive oil

2 tbsp tomato paste

3 tbsp fresh parsley, chopped

Juice of ½ lemon

1 tsp smoked paprika

1 tbsp garlic powder

1 tsp dried oregano

¼ tsp chili flakes

2 tsp salt

½ tsp black pepper

Potatoes

1 lb baby potatoes, halved

Drizzle of olive oil

Salt and pepper to taste

Equipment

Medium-sized bowl for marinat


Instructions

  1. Marinate the Chicken – In a large bowl, mix olive oil, tomato paste, parsley, lemon juice, paprika, garlic powder, oregano, chili flakes, salt, and pepper. Add chicken thighs, coat well, and marinate for 20-30 minutes.
  2. Prepare the Potatoes – While chicken marinates, toss halved potatoes in olive oil, salt, and pepper. Spread evenly in a baking dish.
  3. Assemble and Bake – Place marinated chicken thighs on top of potatoes, skin side down. Cover with foil and bake at 375°F (190°C) for 50 minutes.
  4. Final Bake – Uncover the dish, flip the chicken skin side up, and increase temperature to 425°F (220°C). Bake for an additional 30 minutes until the chicken is crispy and golden, and potatoes are tender.
  5. Serve and Enjoy – Serve the dish hot, optionally with dipping sauces or a fresh salad.
