2 medium zucchinis (about 1 cup grated)
1 head of garlic (for roasting)
1 ½ cups all-purpose flour
1 cup grated Parmesan cheese
2 large eggs
⅓ cup olive oil
1 tablespoon baking powder

Instructions
- Roast the Garlic:
- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap it in foil, and roast for 30-35 minutes, until soft and fragrant.

- While the garlic roasts, wash and grate the zucchinis. After grating, squeeze out excess moisture from the zucchini to avoid a soggy batter.
