Ingredients
Roasted Cherries:
- 2 cups Cherries, cut in half, washed, pitted
- Sprinkle of sugar
Brownie Batter:
- 1 1/3 cup White granulated sugar
- 2 Large eggs
- 1 Egg yolk
- 5 TBSP Unsalted butter, melted
- 1/3 cup Oil (canola or vegetable)
- 1 tsp Pure vanilla extract
- 3/4 cup All-purpose flour
- 3/4 cup Dutch process cocoa powder
- 1 TBSP Cornstarch
- 1 tsp Salt
- 1 cup Semi-sweet chocolate chips
Instructions
- Roasted Cherries: Preheat oven to 400°F. Spread cherries on a baking sheet, sprinkle with sugar, bake for 10 minutes, and let cool.
- Brownie Batter: Preheat oven to 325°F. Prepare the pan. Sift dry ingredients. Beat sugar, eggs, and egg yolk. Add melted butter, oil, and vanilla. Fold in dry ingredients. Add cherries and chocolate chips. Bake for 40-50 minutes. Cool, top with cherries, and serve.
Notes
- You can use fresh or frozen cherries for this recipe.
- Ensure not to overmix the batter to keep the brownies fudgy.
