Description

This Quick Salmon & Herb Cream Cheese Breakfast Toast is the perfect start to your day. With a rich, creamy herb-infused cream cheese spread paired with smoky salmon and crunchy sourdough toast, it’s a light, flavorful, and satisfying meal that comes together in just 15 minutes. Perfect for busy mornings, weekend brunches, or a nutritious snack, this recipe is quick, easy, and customizable to your taste.

Ingredients

For the Herb Cream Cheese Spread:

¼ cup cream cheese, room temperature

1 tsp capers

½ tablespoon extra virgin olive oil

½ teaspoon lemon juice

A pinch of salt and pepper

1 tablespoon finely snipped fresh chives

1 tablespoon finely chopped fresh dill

½ teaspoon lemon zest

For the Toast Assembly:

2 slices sourdough toast

100 g cold-smoked salmon

Extra fresh herbs for garnish (optional)

Instructions

  1. Prepare the Herb Cream Cheese:
In a small bowl, mash together the cream cheese and capers using a fork. Break up the capers to release their flavor. Add olive oil, lemon juice, lemon zest, chives, dill, and a pinch of salt and pepper. Mix until well combined, and adjust seasoning as needed.
  2. Toast the Bread:
Toast the slices of sourdough bread until golden and crispy. While the bread is toasting, prepare the smoked salmon and fresh herbs for garnish.
  3. Assemble the Toast:
Spread a generous layer of the herb cream cheese mixture on each warm slice of toast. Layer the cold-smoked salmon on top, then garnish with extra fresh herbs like chives, dill, or parsley. Serve immediately and enjoy!

Notes

  • Add Veggies: For added freshness, top the toast with sliced avocado, cucumber, or a handful of arugula.
  • Make it Spicy: Add a pinch of red pepper flakes or drizzle with hot sauce for a spicy kick.
  • Gluten-Free Option: Substitute with gluten-free bread for a suitable option for gluten-free diets.
  • Herb Variations: Swap out chives and dill for fresh basil or tarragon to switch up the flavor.
