- 2 tbsp extra virgin olive oil
 - 1 pound organic ground turkey
 - 1 large onion, chopped
 - 2 bell peppers (any color), chopped
 - 3 cloves garlic, chopped
 - 1 tbsp chili powder
 - 1 tbsp ground cumin
 - 1/2 tbsp smoked paprika
 - 1/2 tsp salt
 - 1 cup chicken stock
 - 1 cup pumpkin puree
 - 1 can diced tomatoes (15 ounces)
 - 1 can black beans (15 ounces)
 - 2 tbsp coconut palm sugar

Instructions
- Brown the Turkey: In a large stock pot, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey and cook until browned, about 5 minutes. Remove the turkey from the pot and set aside.
 - Sauté Vegetables: In the same pot, add the remaining tablespoon of olive oil. Add chopped onion, bell peppers, and garlic. Sauté for 5-7 minutes until tender but not mushy.
 - Add Spices: Stir in chili powder, ground cumin, smoked paprika, and salt, coating the vegetables evenly to bloom the spices and enhance flavor.
 - Add Remaining Ingredients: Add black beans, diced tomatoes, pumpkin puree, chicken stock, and coconut palm sugar to the pot. Return cooked turkey to the pot and stir to combine.
 - Simmer the Chili: Partially cover the pot, reduce heat to low, and let simmer for at least one hour, stirring frequently to prevent sticking and to meld flavors.
 - Season to Taste: Taste the chili and adjust seasoning if needed, adding more salt or spices to punch up the flavor.
 - Serve: Ladle the chili into bowls and top with sour cream and sliced jalapeños if desired.
