Description

A hearty and flavorful Pumpkin Turkey Chili combining savory ground turkey, pumpkin puree, black beans, and a blend of aromatic spices. Perfect for cozy evenings and game days, this chili simmers slowly to develop rich, comforting flavors.

Ingredients

Main Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 pound organic ground turkey
  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, chopped
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 1/2 tbsp smoked paprika
  • 1/2 tsp salt
  • 1 cup chicken stock
  • 1 cup pumpkin puree
  • 1 can diced tomatoes (15 ounces)
  • 1 can black beans (15 ounces)
  • 2 tbsp coconut palm sugar

Toppings (optional)

  • Sour cream
  • Sliced jalapeños

Instructions

  1. Brown the Turkey: In a large stock pot, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey and cook until browned, about 5 minutes. Remove the turkey from the pot and set aside.
  2. Sauté Vegetables: In the same pot, add the remaining tablespoon of olive oil. Add chopped onion, bell peppers, and garlic. Sauté for 5-7 minutes until tender but not mushy.
  3. Add Spices: Stir in chili powder, ground cumin, smoked paprika, and salt, coating the vegetables evenly to bloom the spices and enhance flavor.
  4. Add Remaining Ingredients: Add black beans, diced tomatoes, pumpkin puree, chicken stock, and coconut palm sugar to the pot. Return cooked turkey to the pot and stir to combine.
  5. Simmer the Chili: Partially cover the pot, reduce heat to low, and let simmer for at least one hour, stirring frequently to prevent sticking and to meld flavors.
  6. Season to Taste: Taste the chili and adjust seasoning if needed, adding more salt or spices to punch up the flavor.
  7. Serve: Ladle the chili into bowls and top with sour cream and sliced jalapeños if desired.

Notes

  • Bloom your spices while sautéing to intensify the chili’s flavor.
  • Use fresh spices as dried spices lose potency after six months; older spices require increasing quantities.
  • To double the recipe, double all ingredients except the sugar; use 3 tablespoons of coconut palm sugar for a double batch.
  • Longer simmering improves the flavor, making it ideal for slow cooking while enjoying a game or relaxing evening.
