Description

Ingredients

8 tomatoes

1 teaspoon salt

3 tablespoons extra virgin olive oil, divided

2 tablespoons sugar

3 garlic cloves, finely chopped

½ bunch curly parsley, finely chopped

2 teaspoons Herbes de Provence

1/3 cup breadcrumbs

1 teaspoon freshly ground black pepper


Instructions

  1. Wash and dry tomatoes. Slice off tops and lightly salt the insides.

  2. Heat 2 tablespoons olive oil in a large skillet. Place tomatoes cut-side down, sprinkle with sugar, and cook for 25–30 minutes, basting occasionally.

  3. Preheat oven to 350°F (180°C).

  4. Mix garlic, parsley, Herbes de Provence, breadcrumbs, and pepper in a bowl.

  5. Gently flip tomatoes in the skillet. Spoon breadcrumb mixture over each tomato and drizzle with the remaining olive oil.

  6. Transfer skillet to the oven. Bake for 30 minutes until golden and juices are reduced. For a crispier top, broil for 1 minute.

  7. Let cool slightly and serve warm.

  • Add Parmesan or Gruyere for a cheesy variation.
  • Substitute with thyme, basil, or oregano if Herbes de Provence is unavailable.
