  • ½ teaspoon cinnamon

Caramel Pecans

  • 5 tablespoons unsalted butter
  • ½ cup brown sugar, light or dark
  • ⅓ cup heavy cream, room temperature
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon salt
  • 2 cups pecans, toasted then chopped or kept whole
  • ¾ teaspoon vanilla extract
  • 1 tablespoon bourbon (optional)

Instructions

  1. Graham Cracker Crust

    Set oven racks, preheat to 350°F, prepare springform pan, and melt/brown butter. Combine graham cracker crumbs, sugar, spices, and butter. Press into pan and bake.

  2. Cheesecake Filling

    Prepare hot water bath. Beat cream cheese, sugars, sour cream, vanilla, and cinnamon. Add eggs one at a time. Pour over crust, bake in water bath, then cool and chill.

  3. Pecan Caramel Topping

    Toast pecans, make caramel sauce with butter, sugar, cream, spices. Add pecans, vanilla, and bourbon. Pour over cooled cheesecake.
