Description

Ingredients

4 cups old-fashioned rolled oats

1 ½ tsp cinnamon

1 tsp baking powder

1 tsp kosher salt

3 large eggs

1 ⅓ cups plain Greek yogurt

1 cup milk

½ cup maple syrup

1 tsp vanilla extract

½ tsp almond extract

4 cups diced peaches

For the Streusel:

⅓ cup brown sugar

⅓ cup flour

⅓ cup butter

Pinch of cinnamon


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a small bowl, whisk oats, cinnamon, baking powder, and salt.
  3. In a large bowl, whisk eggs, yogurt, milk, maple syrup, vanilla, and almond extract.
  4. Stir dry ingredients into wet until combined. Fold in peaches.
  5. Spread mixture evenly into baking dish.
  6. Make streusel: combine brown sugar, flour, butter, and cinnamon until crumbly. Sprinkle over oatmeal.
  7. Bake 35–40 minutes until golden and set.
  8. Cool slightly before serving with extra yogurt, cream, or peaches.
