Ingredients
500 g salmon (boneless side or fillets)
⅓ cup freshly grated parmesan cheese
⅓ cup panko breadcrumbs (or regular breadcrumbs)
½ tsp paprika
½ tsp dried parsley (or fresh parsley)
½ tsp dried dill (or fresh dill)
2 tbsp melted unsalted butter
1 tsp olive oil
Salt to taste (about ½ tsp)
Freshly ground pepper to taste
Lemon wedges for serving
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Crust: In a mixing bowl, combine parmesan cheese, panko breadcrumbs, paprika, parsley, dill, salt, pepper, and melted butter. Mix until the texture resembles coarse crumbs.
- Prepare the Salmon: Line a baking tray with aluminum foil, and place the salmon skin-side down. Pat dry with a paper towel.
- Coat the Salmon: Brush olive oil over the salmon and sprinkle the breadcrumb mixture evenly over the fish, pressing gently to ensure it sticks.
- Bake: Bake for 12-18 minutes, depending on thickness. The salmon should flake easily and reach an internal temperature of 145°F (62°C).
- Serve: Garnish with lemon wedges and serve hot.
