Ingredients
For the Chicken:
- 2 large chicken breasts
 - ¾ teaspoon flakey sea salt
 - ½ teaspoon cracked black pepper
 - 1.5 teaspoon smoked paprika
 - 4 cloves garlic, minced
 - 1 teaspoon onion powder
 - 1 tablespoon lemon or lime juice
 - 2 tablespoons butter, melted
 - 2 tablespoons olive oil
 
For the Parmesan Crust:
- ⅔ cup freshly grated parmesan
 - 1 teaspoon dried Italian herbs or oregano
 - 1 teaspoon dijon mustard
 - ½ teaspoon red pepper flakes (optional)
 - 1 tablespoon fresh parsley, finely chopped plus more for garnish
 
Instructions
- Preheat the oven to 400F. Slice the chicken breasts in half horizontally to create 4 thinner cutlets. Even out the thickness using a rolling pin or meat mallet.
 - Season the chicken breasts with salt, pepper, onion powder, lemon juice, smoked paprika, dijon, and Italian herbs. Massage to coat evenly.
 - In a bowl, mix melted butter, olive oil, parmesan, garlic, paprika, parsley, and red pepper flakes.
 - Place the seasoned chicken in a baking dish and spread the parmesan mixture over the top.
 - Bake for 15-20 minutes at 400F until the internal temperature reaches 165°F (75°C).
 - Serve with a sprinkle of fresh parsley.
