Ingredients

For the Chicken:

  • 2 large chicken breasts
  • ¾ teaspoon flakey sea salt
  • ½ teaspoon cracked black pepper
  • 1.5 teaspoon smoked paprika
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 tablespoon lemon or lime juice
  • 2 tablespoons butter, melted
  • 2 tablespoons olive oil

For the Parmesan Crust:

  • ⅔ cup freshly grated parmesan
  • 1 teaspoon dried Italian herbs or oregano
  • 1 teaspoon dijon mustard
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, finely chopped plus more for garnish


Instructions

  1. Preheat the oven to 400F. Slice the chicken breasts in half horizontally to create 4 thinner cutlets. Even out the thickness using a rolling pin or meat mallet.
  2. Season the chicken breasts with salt, pepper, onion powder, lemon juice, smoked paprika, dijon, and Italian herbs. Massage to coat evenly.
  3. In a bowl, mix melted butter, olive oil, parmesan, garlic, paprika, parsley, and red pepper flakes.
  4. Place the seasoned chicken in a baking dish and spread the parmesan mixture over the top.
  5. Bake for 15-20 minutes at 400F until the internal temperature reaches 165°F (75°C).
  6. Serve with a sprinkle of fresh parsley.
