Ingredients

For the Chicken:

  • 1 tablespoon olive oil
  • 1 pound chicken breasts, cut into 1-inch chunks
  • 2 teaspoons Italian seasoning
  • Kosher salt and freshly ground black pepper, to taste

For the Orzo:

  • 1/2 cup diced yellow onion
  • 3/4 teaspoon garlic powder or 2 cloves minced garlic
  • 5 ounces baby spinach
  • 24-ounce jar marinara sauce
  • 2 1/2 cups water
  • 1 tablespoon balsamic vinegar (optional)
  • 2 tablespoons chopped basil leaves
  • 12 ounces uncooked orzo
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese


Instructions

  1. Cook the Chicken: Heat olive oil in a large pot over medium-high heat. Season chicken with Italian seasoning, salt, and pepper. Cook until chicken is done, then set aside.
  2. Prepare the Orzo: In the same pot, sauté onion, spinach, and garlic until wilted. Add marinara sauce, water, balsamic vinegar, and basil. Bring to a boil.
  3. Cook the Orzo: Stir in orzo, reduce heat, and simmer for 15-20 minutes until tender. Stir occasionally to prevent sticking.
  4. Finish the Dish: Return chicken to the pot, mix in half of the cheese. Adjust seasoning. Sprinkle remaining cheese on top, cover, and cook until cheese melts. Garnish with basil or Italian seasoning.
