Description

Ingredients

1 package of fresh or frozen ravioli

4 cups of chicken or vegetable broth

1 can of diced tomatoes

½ cup of heavy cream or half-and-half

2 tablespoons of olive oil

1 small onion, diced

3 cloves of garlic, minced

1 teaspoon of dried basil

½ teaspoon of dried thyme

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Fresh parsley or basil, chopped (for garnish)


Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  2. Sauté the Vegetables:
    Heat olive oil in a large oven-safe pot over medium heat.
    Add diced onion and cook until translucent, about 5 minutes.
    Add minced garlic and cook for another 1 minute, stirring constantly.
  3. Make the Soup Base:
    Add diced tomatoes, broth, dried basil, and thyme to the pot. Stir to combine, then bring to a simmer.
  4. Add the Ravioli:
    Add ravioli to the pot, cover with a lid, and transfer to the preheated oven. Bake for 20-25 minutes or until the ravioli are cooked through.
  5. Add Cream & Season:
    Remove the pot from the oven. Stir in heavy cream or half-and-half and season with salt and pepper to taste.
  6. Serve and Garnish:
    Serve the soup hot, topped with grated Parmesan cheese and a sprinkle of fresh parsley or basil, if desired.
