Ingredients
For the dough:
3/4 cup oat flour (ground from gluten-free rolled oats)
3/4 cup almond flour
1/8 teaspoon sea salt
2 ½ tablespoons coconut oil, softened or melted
2 tablespoons maple syrup
3/4 teaspoon vanilla extract
For the filling:
1 cup packed pitted Medjool dates (about 11 dates)
1 tablespoon coconut oil, softened or melted
1 ½ tablespoons cinnamon
1/8 teaspoon sea salt
1/2 teaspoon vanilla extract
1/2 – 1 tablespoon water
Instructions
- Start by making the dough. In a food processor, pulse the oat flour, almond flour, and salt a few times. Add the coconut oil, maple syrup, and vanilla extract, and process again until the mixture comes together in a soft dough. Turn the dough out onto a piece of parchment paper, gently knead it into a ball, then press it into a rough rectangle. Cover with another sheet of parchment and roll into a 7-inch square, about 1/6-inch thick. Place it in the refrigerator to chill while you make the filling.
- To prepare the filling, combine the pitted dates, coconut oil, cinnamon, sea salt, vanilla extract, and 1/2 tablespoon of water in the food processor. Blend into a thick, smooth paste, adding a little more water only if necessary.
- Remove the chilled dough and spread the cinnamon-date filling evenly over the surface. If the filling is sticky, lightly grease your spatula with coconut oil to help spread it smoothly. Starting from one edge, carefully roll the dough into a tight log, using the parchment paper to assist.
- Slice the log into 12 equal bites, about 3/4-inch thick. Use a sharp knife or dental floss for cleaner cuts. Serve immediately or chill for 30 minutes for a firmer texture.

- Use store-bought or homemade oat flour—both work well.
- If you don’t have almond flour, substitute with more oat flour gradually until the dough holds.
- Medjool dates are best, but Deglet Noor can be used if soaked in warm water first.
