This Mushroom Cheeseburger Casserole is a hearty and flavorful dish that combines the classic flavors of a cheeseburger with savory mushrooms. It’s easy to make and perfect for a cozy family dinner.
Ingredients
Ground Beef:
- 1 pound ground beef (85% lean)
Mushrooms:
- 1 pound mushrooms, sliced (cremini or baby bella)
Garlic:
- 5 cloves garlic, thinly sliced
Swiss Cheese:
- 8 slices swiss cheese, finely chopped
Goat Cheese:
- 1 cup crumbled goat cheese
Scallions:
- 1/3 cup thinly sliced scallions
Salt:
- 1 teaspoon table salt
Instructions
- Prepare: Preheat oven to 375 F. Set aside 8×8 inch baking dish.
- Cook Beef & Mushrooms: Brown beef with salt in a pan. Add mushrooms and garlic, cook until mushrooms are shrunken.
- Assemble Casserole: Transfer beef-mushroom-garlic mixture to baking dish. Mix in goat cheese and 2/3 of swiss cheese. Sprinkle scallions and remaining swiss cheese on top.
- Bake & Serve: Bake at 375 F until hot and bubbly. Let cool for 5 minutes, then cut into portions and serve hot.
Notes
- Customize the casserole by adding sun-dried tomatoes, olives, jalapeños, caramelized onions, or sour cream.
- Refrigerate leftovers for up to 3 days and reheat in a 350 F oven.
- To increase servings, double ingredients and use a larger baking dish.
