Ingredients
For the Creamed Spinach:
4 tablespoons unsalted butter
1 medium yellow onion, minced
3 cloves garlic, minced
4 teaspoons kosher salt, divided
1 teaspoon coarse ground black pepper
½ teaspoon freshly grated nutmeg
¼ cup flour
3 ½ cups half-and-half
2 ¼ pounds fresh leaf spinach, or 1 pound frozen spinach
1 cup mozzarella cheese
4 ounces cream cheese
½ cup grated Parmesan cheese
Instructions
- Prepare the Spinach:
Bring a large pot of water to a boil, adding 2 teaspoons of salt.
Add the spinach and cook until wilted, about 1 minute.
Drain the spinach in a strainer or colander, then rinse with cold water until cool. Squeeze out the excess water from each handful of spinach and chop it into ¾ inch strips. - Sauté the Onion and Garlic:
In a large skillet, melt the butter over medium-low heat.
Add the minced garlic and onions, cooking for 8-10 minutes until the onions become translucent. - Make the Creamy Sauce:
Add the remaining 2 teaspoons of kosher salt, black pepper, and freshly grated nutmeg.
Stir in the flour and cook for 2-3 minutes on low heat until the mixture smells slightly nutty.
Pour in the half-and-half and bring to a boil while stirring frequently. - Add the Cheeses:
Add the mozzarella cheese and cream cheese to the mixture. Stir until the cheeses melt and the sauce becomes smooth and creamy.
Continue cooking for 6-8 minutes or until the sauce thickens. - Combine the Spinach and Parmesan:
Add the chopped spinach and Parmesan cheese to the skillet, stirring to combine.
Cook for another 2-3 minutes to allow everything to meld together. - Serve and Enjoy:
Serve the creamed spinach hot as a delicious, cheesy side dish alongside your favorite meal.
Notes
- Make it dairy-free: Use dairy-free butter, non-dairy cream cheese, and a dairy-free mozzarella alternative for a vegan version of this dish.
- Add some spice: If you prefer a bit of heat, add a pinch of cayenne pepper or red pepper flakes to the sauce for a spicy kick.
- Use frozen spinach: If fresh spinach is unavailable, you can substitute frozen spinach. Be sure to thaw and drain it well before using.
