Ingredients
Main Ingredients
- 3 large eggs
- 2/3 cup full-fat canned coconut milk
- ¼ cup avocado oil
- 2 tsp pure vanilla extract
- 3 cups finely ground almond flour
- ½ cup coconut sugar or granulated sugar of choice
- ¼ cup matcha powder
- 1 tsp baking soda
- ½ tsp sea salt
- ⅔ cup chocolate chips (optional)
Optional Frosting
- ¼ to ½ cup coconut butter (coconut manna)
Instructions
- Preheat Oven: Preheat the oven to 350 degrees Fahrenheit and line a muffin tin with paper liners to prepare for baking.
- Mix Wet Ingredients: In a mixing bowl, whisk together the eggs, full-fat canned coconut milk (melted if solid), avocado oil, and pure vanilla extract until well combined.
- Combine Dry Ingredients: In a separate bowl, mix the almond flour, coconut sugar, matcha powder, baking soda, and sea salt thoroughly.
- Make the Batter: Pour the dry ingredients into the wet ingredients bowl and stir well until fully combined. Fold in the chocolate chips if using.
- Fill Muffin Tin: Transfer the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake: Bake on the center rack for 18-22 minutes until muffins turn golden brown and a digital thermometer inserted in the center reads 190°F or higher.
- Optional Frosting: Heat ¼ cup coconut butter in the microwave for 10-20 seconds until soft and spreadable. Spread it on top of the cooled muffins and optionally sprinkle extra matcha powder. Alternatively, use a powdered sugar glaze made with 1 cup powdered sugar mixed with 2 tablespoons water.
Notes
- If coconut milk is solid, warm it slightly to make it easier to mix.
- Use paper liners for easy removal and less mess.
- The internal temperature should reach at least 190°F to ensure muffins are fully baked.
- Chocolate chips are optional; you can omit them for a pure matcha flavor.
- Adjust sweetness according to your preference by varying the sugar amount.
- The muffins are gluten-free and paleo-friendly due to the almond flour base.
