Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees Fahrenheit and line a muffin tin with paper liners to prepare for baking.
  2. Mix Wet Ingredients: In a mixing bowl, whisk together the eggs, full-fat canned coconut milk (melted if solid), avocado oil, and pure vanilla extract until well combined.
  3. Combine Dry Ingredients: In a separate bowl, mix the almond flour, coconut sugar, matcha powder, baking soda, and sea salt thoroughly.
  4. Make the Batter: Pour the dry ingredients into the wet ingredients bowl and stir well until fully combined. Fold in the chocolate chips if using.
  5. Fill Muffin Tin: Transfer the batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake: Bake on the center rack for 18-22 minutes until muffins turn golden brown and a digital thermometer inserted in the center reads 190°F or higher.
  7. Optional Frosting: Heat ¼ cup coconut butter in the microwave for 10-20 seconds until soft and spreadable. Spread it on top of the cooled muffins and optionally sprinkle extra matcha powder. Alternatively, use a powdered sugar glaze made with 1 cup powdered sugar mixed with 2 tablespoons water.
