Ingredients

2 lb chicken thigh fillet (Note 1)

2 tbsp sun-dried tomato oil

Salt and pepper, to taste

For the Sauce:

2 large cloves garlic, minced

½ cup sun-dried tomatoes (Note 2)

2 tbsp tomato paste

½ tbsp Italian seasoning

1 tsp dried oregano

1 cup vegetable broth (or chicken broth)

1 cup heavy cream (Note 3)

¼ cup fresh parsley, coarsely chopped, stems removed

Red chili flakes (optional, for heat)


Instructions

  1. Cook the Chicken:
  2. Heat 1 tablespoon of sun-dried tomato oil in a large cast-iron skillet over medium-high heat.
  3. Season the chicken thighs with salt and pepper, then sauté for 3-4 minutes per side until golden brown.
  4. Remove the chicken from the pan and set aside.
  5. Make the Sauce:
  6. Reduce the heat to low. In the same pan, add the remaining 1 tablespoon of sun-dried tomato oil and minced garlic. Sauté for 1 minute until fragrant.
  7. Pour in the broth to deglaze the pan, scraping up any flavorful browned bits. Increase heat to medium.
  8. Stir in the heavy cream, Italian seasoning, dried oregano, sun-dried tomatoes, and tomato paste. Mix well.
  9. Simmer the Chicken:
  10. Return the cooked chicken to the pan and gently toss to coat it evenly in the sauce.
  11. Once the sauce starts bubbling, reduce the heat to very low. Let it simmer for about 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  12. Taste the sauce and adjust the seasoning with salt and pepper as needed.
  13. Finish and Serve:
  14. Garnish with freshly chopped parsley and a pinch of red chili flakes (if desired for heat).
  15. Serve immediately while steaming hot.
