2 large cloves garlic, minced
½ cup sun-dried tomatoes (Note 2)
2 tbsp tomato paste
½ tbsp Italian seasoning
1 tsp dried oregano
1 cup vegetable broth (or chicken broth)
1 cup heavy cream (Note 3)
¼ cup fresh parsley, coarsely chopped, stems removed
Red chili flakes (optional, for heat)
Instructions
- Cook the Chicken:
- Heat 1 tablespoon of sun-dried tomato oil in a large cast-iron skillet over medium-high heat.
- Season the chicken thighs with salt and pepper, then sauté for 3-4 minutes per side until golden brown.
- Remove the chicken from the pan and set aside.
- Make the Sauce:
- Reduce the heat to low. In the same pan, add the remaining 1 tablespoon of sun-dried tomato oil and minced garlic. Sauté for 1 minute until fragrant.
- Pour in the broth to deglaze the pan, scraping up any flavorful browned bits. Increase heat to medium.
