 - 4 ounces cream cheese
 - 1 large egg yolk
 
Instructions
- Preheat and prepare pan: Preheat the oven to 350° F. Prepare a 9x5x3 inch loaf pan by spraying it with non-stick spray or greasing it with butter to prevent sticking.
 - Mix dry ingredients: In a medium-sized bowl, whisk together the oat flour, pumpkin pie spice, baking powder, baking soda, and sea salt until well combined.
 - Blend wet ingredients: In a blender, combine the pumpkin puree, almond butter, maple syrup, eggs, and vanilla extract. Blend until the mixture is smooth and uniform.
 - Combine wet and dry: Pour the blended wet ingredients into the bowl with dry ingredients. Stir gently until the batter is fully incorporated without overmixing.
 - Prepare cream cheese filling: In a medium bowl, beat together softened cream cheese, maple syrup, and the egg yolk using a hand mixer until the mixture is creamy and smooth.
 - Layer batter and filling: Pour half of the pumpkin batter into the prepared loaf pan.
