Description

This delicious Maple Cream Cheese Swirled Pumpkin Bread is a moist and flavorful baked good perfect for autumn or any pumpkin lover. It combines warm pumpkin pie spices with a creamy, sweet maple cream cheese swirl, creating a perfect balance of textures and flavors. Made with wholesome oat flour and natural sweeteners, this bread is a delightful treat for breakfast, snack, or dessert.

Ingredients

Dry Ingredients

  • 1 cup oat flour
  • 1 tbsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp sea salt

Wet Ingredients

  • 1 can pumpkin puree (a little shy of 2 cups)
  • 1/2 cup almond butter
  • 2/3 cup maple syrup
  • 3 large eggs
  • 2 tsp vanilla extract

Maple Cream Cheese Filling

  • 1/4 cup maple syrup
  • 4 ounces cream cheese
  • 1 large egg yolk

Instructions

  1. Preheat and prepare pan: Preheat the oven to 350° F. Prepare a 9x5x3 inch loaf pan by spraying it with non-stick spray or greasing it with butter to prevent sticking.
  2. Mix dry ingredients: In a medium-sized bowl, whisk together the oat flour, pumpkin pie spice, baking powder, baking soda, and sea salt until well combined.
  3. Blend wet ingredients: In a blender, combine the pumpkin puree, almond butter, maple syrup, eggs, and vanilla extract. Blend until the mixture is smooth and uniform.
  4. Combine wet and dry: Pour the blended wet ingredients into the bowl with dry ingredients. Stir gently until the batter is fully incorporated without overmixing.
  5. Prepare cream cheese filling: In a medium bowl, beat together softened cream cheese, maple syrup, and the egg yolk using a hand mixer until the mixture is creamy and smooth.
  6. Layer batter and filling: Pour half of the pumpkin batter into the prepared loaf pan. Then add the maple cream cheese filling on top and gently swirl it into the batter using a spatula, smoothing the top carefully. Pour the remaining batter over the cream cheese layer, taking care not to disturb the swirl.
  7. Bake the bread: Place the loaf pan in the oven and bake for 50 to 60 minutes, or until the top is set, golden, and a toothpick inserted into the center comes out mostly clean with dry crumbs.
  8. Cool and serve: Remove the pumpkin bread from the oven and allow it to cool completely before slicing and serving. Enjoy the perfect balance of creamy maple and spiced pumpkin flavors.

Notes

  • Use a 9x5x3 inch loaf pan for best results.
  • Make sure the cream cheese is softened to easily blend with the maple syrup and egg yolk.
  • Do not overmix the batter after combining wet and dry ingredients to keep the bread tender.
  • The swirl effect looks best if you pour the batter and cream cheese filling gently and use a spatula to swirl lightly.
  • Check the bread starting at 50 minutes to avoid overbaking; toothpick should come out with dry crumbs or clean.
  • Store leftover bread tightly wrapped or in an airtight container in the refrigerator for up to 5 days.
