Ingredients

For the Chicken:

  • 1 1/2 pounds boneless skinless chicken thighs

For the Rice:

  • 1 cup uncooked white rice, jasmine rice, or long-grain white rice
  • 2 1/4 cups low-sodium chicken broth
  • Zest and juice of 1 lemon
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon chopped flat-leaf parsley


Instructions

  1. Prepare the Chicken: Combine Italian seasoning, garlic powder, salt, and pepper. Season chicken thighs with half of the mixture.
  2. Sear the Chicken: Heat olive oil in a large pan, sear chicken thighs for 1-2 minutes per side. Remove chicken from the pan.
  3. Cook the Rice: Add rice, remaining spice blend, lemon zest, and chicken broth to the pan. Bring to a boil, cover, and simmer for 10 minutes.
  4. Finish the Dish: Return chicken to the pan, cover, and cook for another 10-15 minutes. Remove chicken, stir in Parmesan, parsley, and lemon juice. Serve chicken over rice.
