Description

Lebanese Tomato Salad is a bright, zesty side dish made with ripe tomatoes, garlic, red pepper, parsley, and a smoky sumac-paprika dressing. It’s quick to make, full of bold Mediterranean flavor, and pairs beautifully with grilled meats or mezze platters.

Ingredients

2 lb campari tomatoes

1 large red bell pepper

4 garlic cloves, peeled

1 tablespoon smoked paprika

1 teaspoon sumac

4 tablespoons olive oil

Salt and pepper, to taste

¼ cup parsley, chopped

Instructions

  1. Cut tomatoes into quarters and place in a large bowl.
  2. In a food processor, blend red bell pepper and garlic into a paste.
  3. In a separate bowl, mix the pepper-garlic paste with paprika, sumac, olive oil, salt, and pepper.
  4. Pour the dressing over the tomatoes and toss gently.
  5. Stir in chopped parsley.
  6. Cover and refrigerate for 30 minutes before serving.

Notes

  • Add chili flakes or cayenne for heat.
  • Swap parsley with mint or cilantro for variation.
  • Use a mix of tomato types for color and sweetness.
  • Top with pine nuts or feta for extra texture or richness.
  • Best served chilled, do not reheat.
