Lebanese Tomato Salad is a bright, zesty side dish made with ripe tomatoes, garlic, red pepper, parsley, and a smoky sumac-paprika dressing. It’s quick to make, full of bold Mediterranean flavor, and pairs beautifully with grilled meats or mezze platters.
Ingredients
2 lb campari tomatoes
1 large red bell pepper
4 garlic cloves, peeled
1 tablespoon smoked paprika
1 teaspoon sumac
4 tablespoons olive oil
Salt and pepper, to taste
¼ cup parsley, chopped
Instructions
- Cut tomatoes into quarters and place in a large bowl.
- In a food processor, blend red bell pepper and garlic into a paste.
- In a separate bowl, mix the pepper-garlic paste with paprika, sumac, olive oil, salt, and pepper.
- Pour the dressing over the tomatoes and toss gently.
- Stir in chopped parsley.
- Cover and refrigerate for 30 minutes before serving.

- Add chili flakes or cayenne for heat.
- Swap parsley with mint or cilantro for variation.
- Use a mix of tomato types for color and sweetness.
