Description

A vibrant and hearty one-pan dish, Japanese BBQ Chicken Fried Rice Extravaganza features caramelized BBQ chicken, fluffy eggs, and crispy rice stir-fried in Japanese barbecue sauce, finished with chili oil, sesame seeds, and chives. It’s perfect for busy weeknights or entertaining.

Ingredients

1 pound boneless skinless chicken breast

1 tablespoon dark brown sugar

2 cups chilled cooked rice

2 large eggs

3 tablespoons olive oil

2 tablespoons Japanese BBQ sauce

Chili oil for garnish

Sesame seeds for garnish

Chopped chives for garnish

Instructions

  1. Dice the chicken and mix with dark brown sugar and your choice of spices. Let it marinate for about 10 minutes.

  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the marinated chicken until browned and fully cooked. Remove from the skillet and set aside.

  3. In the same skillet, heat the remaining olive oil. Add the chilled rice and stir-fry until it’s hot and slightly crispy.

  4. Push the rice to the edges of the pan to create a well in the center. Crack in the eggs and scramble them until just cooked, then mix into the rice.

  5. Stir in the Japanese BBQ sauce and return the chicken to the skillet. Toss to combine and cook for another minute to caramelize.

  6. Serve hot, garnished with chili oil, sesame seeds, and chopped chives.

Notes

  • Use day-old chilled rice for best results and avoid a mushy texture.
  • Marinating the chicken enhances flavor and helps it caramelize beautifully.
  • You can control the heat by adjusting the amount of chili oil used.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat in a skillet to maintain texture or microwave with a splash of water or sauce.
