Ingredients
1 pound boneless skinless chicken breast
1 tablespoon dark brown sugar
2 cups chilled cooked rice
2 large eggs
3 tablespoons olive oil
2 tablespoons Japanese BBQ sauce
Chili oil for garnish
Sesame seeds for garnish
Chopped chives for garnish
Instructions

Dice the chicken and mix with dark brown sugar and your choice of spices. Let it marinate for about 10 minutes.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the marinated chicken until browned and fully cooked. Remove from the skillet and set aside.

In the same skillet, heat the remaining olive oil. Add the chilled rice and stir-fry until it’s hot and slightly crispy.

Push the rice to the edges of the pan to create a well in the center. Crack in the eggs and scramble them until just cooked, then mix into the rice.
