2 eggs

½ ripe avocado

2 tsp pesto

Instructions

  1. Boil the eggs: Bring a large saucepan of water to a gentle boil over medium-high heat. Carefully lower the eggs into the water using a slotted spoon. Cook for 7 minutes for jammy yolks, adjusting heat to maintain a gentle boil.
  2. Toast the bread: While the eggs cook, toast the bread slices to your preferred crispness.
  3. Prepare the avocado: Mash the avocado and spread evenly on each slice of toast (about ¼ avocado per slice).
