Description

Start your day with a bowl of Indian Overnight Oats – a wholesome, delicious, and easy-to-make breakfast that’s infused with exotic flavors like cardamom and saffron. This unique twist on traditional oats is a great way to enjoy the taste of Kulfi ice cream in a healthy, plant-based form. With the richness of pistachios, the warmth of cardamom, and the delicate touch of saffron, this dish will make your mornings feel special.

Ingredients

1 cup rolled oats (old-fashioned oats work best)

1 cup full-fat milk (or any milk of your choice)

2 tablespoons sugar (adjust to taste)

2 teaspoons chia seeds

¼ teaspoon cardamom powder

1 pinch of salt

1 pinch of saffron (crushed with your fingertips)

3 tablespoons raw pistachios (chopped)

Instructions

  1. Combine the Ingredients:
In a mason jar or container, combine the rolled oats, milk, sugar, chia seeds, cardamom powder, salt, and saffron. Stir well to mix everything thoroughly.
  2. Refrigerate:
Cover the jar or container and refrigerate for at least 6 hours or overnight to allow the oats to soak up the liquid and absorb all the flavors.
  3. Stir and Sweeten:
Before serving, give the oats a good stir and taste. If you prefer a sweeter flavor, feel free to add a bit more sugar and stir it in.
  4. Top and Serve:
Just before serving, sprinkle the chopped pistachios on top for some crunch and extra flavor.

Notes

Oats: Use rolled oats or old-fashioned oats for the best texture. Instant oats might turn mushy with long soaking times, so they’re not recommended for this recipe.

Saffron: If you don’t have saffron, simply skip it! The oats will still be delicious, though they may have a more subtle color.

Sugar: You can adjust the amount of sugar based on your preference, or substitute it with a natural sweetener like maple syrup or stevia.

Cardamom: For a fresher taste, grind whole green cardamoms into a fine powder using a dry grinder. Store the ground cardamom in an airtight container in the freezer for future use.
