Ingredients
1 lb boneless chicken breasts or thighs, diced
3 tablespoons honey
Juice and zest of 2 limes
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon smoked paprika
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon black pepper
1 cup corn (grilled or canned)
2 tablespoons red onion, finely chopped
1 tablespoon fresh cilantro, chopped
Juice of ½ lime
Salt, to taste
3 ripe avocados, halved and pitted
Lime wedges, for serving
Extra cilantro, for garnish
Instructions
- In a bowl, whisk honey, lime juice and zest, olive oil, garlic, paprika, cumin, salt, and pepper. Add chicken, toss, cover, and marinate for at least 30 minutes in the refrigerator.
- Heat a skillet or grill over medium heat. Cook chicken 6–8 minutes, turning occasionally, until golden and cooked through. Rest briefly.
- In a bowl, mix corn, red onion, cilantro, lime juice, and salt. Fold in cooked chicken.
- Scoop a bit of flesh from each avocado half to make space for filling.
- Fill avocados generously with chicken-corn salsa mixture.
- Garnish with cilantro and serve with lime wedges.
