Description

This hearty and delicious Hobo Dinner cooked in the slow cooker is a convenient meal that the whole family will love. With savory meatloaf, seasoned potatoes, and melted cheese, it’s a complete meal in one pot.


Ingredients

    Meatloaf Ingredients:

  • 1 lb. 10% fat ground beef
  • 2 large eggs
  • ½ cup white onion, diced
  • ¼ cup ketchup
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ½ tsp. onion powder
  • 15 Saltine crackers, crushed
  • Potatoes:

  • 4 small russet potatoes, sliced
  • ½ cup white onion, sliced
  • ½ tsp. salt
  • ½ tsp. onion powder
  • ¼ tsp. pepper
  • 3 Tbsp. butter, melted
  • 1 cup sharp cheese, shredded (add at the end)
  • For Serving:

  • ketchup for topping meatloaf


Instructions

  1. Combine Meatloaf Ingredients: In a large bowl, mix ground beef, eggs, diced onion, ketchup, salt, pepper, onion powder, and crushed crackers.
  2. Shape Meatloaf: Form the meatloaf in the slow cooker, keeping it away from the sides.
  3. Prepare Potatoes: Create a foil ‘bowl’ next to the meatloaf and add sliced potatoes and onions. Season with salt, pepper, and onion powder, then drizzle with melted butter.
  4. Cook: Cover and cook on LOW for 5 hours without opening the lid.
  5. Add Cheese: Sprinkle shredded cheese over potatoes and cover for an additional 5 minutes until melted.
  6. Serve: Top meatloaf with ketchup and enjoy!

  • Store leftovers in the fridge for up to 4 days.
