Ingredients

Mushrooms

  • 1 lb button mushrooms (450 g)

Filling

  • 2 Tbsp oil (30 mL)
  • ½ yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 Tbsp fresh thyme leaves
  • ½ cup Italian breadcrumbs (60 g)
  • ¼ cup cream cheese (50 g)
  • ¼ cup grated parmesan (30 g)
  • ¼ cup finely chopped fresh parsley (20 g)
  • ¼ tsp salt
  • ¼ tsp pepper


Instructions

  1. Prep Mushrooms: Preheat the oven to 400°F (204°C). Wipe the mushrooms clean to remove any dirt. Carefully pluck out the stems and finely chop them. Arrange the mushroom caps hollowed side up on a parchment-lined baking sheet.
  2. Cook Flavor Base: Heat the oil in a large sauté pan over medium heat. Add the finely diced onion, minced garlic, and fresh thyme leaves. Cook for about 3 minutes until the onion becomes soft and fragrant.
  3. Add Mushroom Stems: Add the chopped mushroom stems to the pan with the cooked onions. Continue cooking for 5 to 10 minutes until the stems have released their moisture and the mixture is nicely softened.
  4. Make Filling: Remove the pan from heat. Stir in the Italian breadcrumbs, cream cheese, grated parmesan, chopped fresh parsley, salt, and pepper until well combined.
  5. Stuff Mushrooms: Carefully spoon the filling mixture into each hollowed-out mushroom cap, dividing it evenly among them.
  6. Bake: Place the baking sheet in the preheated oven and bake the stuffed mushrooms for 15 minutes or until the tops are golden brown and the filling is heated through.
