Ingredients

For the Chicken:

2 chicken breasts (220g / 7oz each, skinless & boneless)

¾ tsp salt (divided)

¼ tsp black pepper (divided)

2 tbsp unsalted butter (30g)

7 oz mushrooms, sliced ⅛″ thick (about 2 cups / 200g)

2 cloves garlic, minced

½ tsp thyme leaves

2 cups fresh baby spinach

3 oz mozzarella cheese, sliced (80g)

1 tbsp olive oil


Instructions

  1. Preheat Oven & Prepare Chicken – Preheat oven to 200°C/390°F (180°C fan). Slice a pocket into each chicken breast, being careful not to cut through. Season inside and out with half the salt and pepper.
  2. Make Mushroom Filling – In an oven-proof skillet, melt butter over medium-high heat. Sauté mushrooms 3 minutes until golden. Add garlic, thyme, remaining salt and pepper; cook 2 minutes. Stir in spinach until wilted (~30 sec).
  3. Stuff Chicken – Fill each pocket with mushroom mixture, top with mozzarella slices. Secure with toothpicks.
  4. Sear Chicken – Wipe skillet, heat olive oil over medium-high. Sear stuffed chicken 1–1.5 min per side until golden.
  5. Bake – Transfer skillet to oven. Bake 15 minutes, or until chicken reaches 65°C/149°F internally (measure chicken, not filling).
  6. Rest & Serve – Transfer to plate, cover loosely with foil, rest 5 minutes before serving.

Notes

  • Pair with roasted asparagus, broccoli, or a simple spinach salad for balance.
  • Toothpicks help secure filling but don’t need to be airtight.
