2 tablespoons olive oil

1 cup plain Greek yogurt
1 cup grated Parmesan cheese
8 oz whole wheat penne pasta
2 cups fresh spinach
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Bring salted water to a boil in a large pot. Add the whole wheat penne pasta and cook according to package instructions until al dente. Drain and set aside.

- Make the Sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Pour in the chicken broth, scraping up browned bits from the pan. Bring to a simmer for 2–3 minutes.
- Combine Ingredients: Lower heat and stir in Greek yogurt and Parmesan cheese until the sauce is smooth. Add cooked chicken and spinach, stirring until the spinach wilts.
- Toss Pasta: Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. Cook for an additional 2–3 minutes to heat through.
- Serve: Garnish with fresh parsley and extra Parmesan, if desired. Serve immediately.
